Review: Rabbit Hole Straight Bourbon Whiskey Finished in PX Sherry Casks

A look at this very interesting ‘bourbon finished’ from a new player in the bourbon industry.

Production: Straight Bourbon Whiskey Finished in PX Sherry Casks. Original distiller and sourced bourbon not disclosed, but they do say it used a wheated recipe.

Color: Dark ruby.

Nose: Bright, fruity and floral with obvious sherry. Apricot, plum, citrus. Very sweet, burnt sugar. Tropical fruit including melon and coconut. Light green fruit. Touch of sweet balsamic. Tart green apple.

Palate: Sweet, tart and rich in balance. Fruit complexes from the nose and strong coconut. Almonds. Tart green fruit – apple, pear. Builds to a strong vanilla and cinnamon and clove.

Finish: Long, sweet, fading to dry. Fruits give way to spices, a touch of grains and wood smoke.

Verdict: If you’ll drift into the ‘bourbons finished’ category, this is a must-try. Do yourself a favor and just start out buying a bottle.
